Approaches you - Most men approach women only if they're attracted to them. They don't do it unless he has any interest in you. So if a guy approaches you, it's a sure fire sign that he's interested in you. But there's no guarantee yet. That's why there are other signs as well.
Blushes when you smile - You have to get the thought of yourself inside his head. Almost all humans tend to blush when we think about someone we are attracted to. The best way to do that is by making eye contact with him and smiling at him from a distance. If he smiles with a slight blush, it's another sign that he has feelings for you.

Well... why's that? It's because we are humans. Our attraction triggers are biological and a part of nature. Just like how we have certain specific attraction triggers, animals have it too. If animals are attracted to a particular member of the opposite sex, they'd do anything to attract them back.
But as humans, we always have the ability to choose our response. Between stimulus and response, we always have the freedom to choose. If he's a really awesome guy (i.e. Mr. Right), he'll have more control over this ability to choose. He can choose not to go out with you.
